Seat turnover = Guests served ÷ Seats available

Count each guest served once during the selected period. If the same physical seat is reused for multiple waves, all guests are included in the numerator while physical seats remain the denominator.

The main result shows how many guest sittings the catering event served per available seat during the selected period.

A higher turnover is not automatically better; service pace, check size, event format, and customer experience also matter.

Is a single banquet seating expected to have turnover near 1.0?

Often, yes. If every available seat is used once, turnover is approximately 1.0; partial attendance can make it lower.

How do multiple meal waves affect the ratio?

Guests from every wave are added together while physical seats remain the same, so reused seating increases turnover.

Should standing guests be counted?

Only if your capacity definition includes them. For a seat-turnover metric, it is usually clearer to count seated guests against physical seats.

What is guests per seat-hour useful for?

It incorporates event duration, which helps compare a short, tightly scheduled function with a longer event that uses the same number of seats.

Can this metric determine staffing needs?
