Seat turnover is a period throughput ratio, not the average time one party occupies a seat. The calculation assumes the seat count is reasonably stable during the selected period and that guest counts correspond to that same seating capacity.

What the result means

Use the main result together with the supporting metrics and the assumptions entered above. Compare periods only when the input definitions are consistent.

Given: 168 guests served, 18 available seats, and a 6-hour service period.

Calculation: Seat turnover = 168 ÷ 18 = 9.33 times. Seat-hours = 18 × 6 = 108.0. Guests per seat-hour = 168 ÷ 108.0 = 1.56.

Result: Each seat served about 9.33 guests during the period, equivalent to 1.56 guests per seat-hour. Compare similar service formats before drawing conclusions about speed or capacity.

Does seat turnover measure table turns?

It is related but not identical. This calculator uses guests divided by seats, while table turns commonly use parties or occupied tables divided by the number of tables.

Should takeout customers be counted?

Usually not if the goal is to evaluate seating throughput, because takeout customers do not use the entered seats. Include only demand tied to the capacity in the denominator.

What if my food truck has no customer seating?

Then seat turnover is not a natural operating metric. Use a transaction-per-hour, orders-per-service-window, or another throughput measure instead of inventing a seat count.

Can a high turnover number be a problem?

Potentially. High throughput can be positive, but it can also reflect rushed service or a format where guests stay briefly. Pair the metric with sales, wait times, and service quality.

Why include guests per seat-hour?

It normalizes for period length. That makes a two-hour lunch service easier to compare with a four-hour event than the raw turnover figure alone.
