Ghost Kitchen Seat Turnover Calculator

This calculator estimates seat turnover for a ghost kitchen that has an actual guest seating or pickup-seating area by dividing the number of covers or seated guests served by the number of seats available during the selected service period. It shows how many times, on average, each seat was used during that period.

Turnover is most useful for services where seating capacity is a real operating constraint. For concepts without guest seating, including a pure ghost kitchen, the metric is only meaningful if “seats” represent an actual hybrid dining or pickup-seating area; otherwise an order-throughput metric is more appropriate.

Seat turnover = Covers served ÷ Available seats

Covers per seat-hour = Covers served ÷ (Available seats × Service hours).

Seat turnover does not directly measure table-turn time. It measures how many guest uses were generated by each seat over the whole service window.

What the result means

Seat turnover shows average guest uses per available seat during the selected service period. It is a capacity-throughput measure rather than a direct measure of guest satisfaction or profitability.

Only use this metric where physical guest seating is relevant. Delivery-only operations should prefer an order or production-capacity metric.

Given:

Service window = 5 hours

Calculation:
Seat turnover = 420 ÷ 140 = 3.00 turns
Covers per seat-hour = 420 ÷ (140 × 5) = 0.60

Result:
Seat turnover = 3.00 turns; covers per seat-hour = 0.60.

Interpretation:
Across the five-hour service, each available seat supported three guest covers on average.

Is seat turnover the same as table turnover?

They are related but not identical. Seat turnover uses individual seats as the capacity base, while table turnover uses tables and can be affected by party size and table mix.

Should staff or blocked seats be counted?

No. Use seats actually available to guests during the measurement window so the denominator reflects sellable seating capacity.

Can turnover be greater than 1?

Yes. A value of 3.0 means each available seat was used by three guests on average over the service period.

Does a higher turnover always mean better performance?

Not necessarily. Higher turnover can support more volume, but guest experience, spend per cover, pacing, and event format also matter.

What should a ghost kitchen use if it has no guest seating?

For a delivery-only ghost kitchen, seat turnover is not a natural operating metric. Track orders per production station, orders per labor hour, or another throughput measure instead; use this calculator only when an actual guest seating area exists.
