Estimate food cost for a menu item or menu segment from servings sold, ingredient cost per serving, and expected waste. The calculator compares the adjusted food cost with sales generated at the entered selling price, producing a food-cost percentage and contribution margin per serving. This gives menu-engineering work a cost foundation before items are classified by popularity or profitability.

Use the result when testing recipe changes, price changes, portion adjustments, or shifts in ingredient cost. The model is deliberately transparent: it treats waste as an added percentage of recipe cost and does not include labor, occupancy, delivery commissions, or other overhead. Those costs can be evaluated separately so the food-cost percentage remains easy to interpret.

Ingredient cost per serving = direct recipe ingredient cost for one standard portion
Waste allowance = additional cost percentage applied to recipe cost
Selling price = sales price for one serving
Contribution per serving = selling price less adjusted food cost only

Assumptions: Waste is modeled as a percentage markup on standard recipe cost. The contribution figure is before labor, occupancy, platform fees, and other operating expenses.

What the result means

The food-cost percentage shows how much of menu-item sales is consumed by adjusted ingredient cost. Contribution per serving shows the dollars left after food cost to help cover labor, overhead, and profit.

For products with yield loss already embedded in the recipe cost, avoid adding the same loss again through the waste allowance.

Calculation:
Adjusted cost = $6.40 × 1.04 = $6.656
Total food cost = 420 × $6.656 = $2,795.52
Sales = 420 × $18.50 = $7,770.00
Food cost % = $2,795.52 ÷ $7,770 × 100 = 35.98%
Contribution per serving = $18.50 − $6.656 = $11.844

Result:

Interpretation:
The item produces about $11.84 of contribution per serving before non-food costs, with adjusted food cost equal to roughly 35.98% of sales.

Should packaging be included in ingredient cost?

Include packaging if you want the metric to represent total direct consumable cost per serving. For dine-in menu engineering, you may prefer to keep packaging separate unless it is routinely used.

What if my recipe cost already includes waste?

Set the waste allowance to 0 to avoid double-counting. The extra allowance is only for loss not already reflected in the per-serving cost.

Can I use this for a whole menu category?

Yes, if the inputs are weighted averages for that category. For better decisions, individual-item calculations are usually more informative because prices and recipe costs differ.

Why can contribution per serving be negative?

A negative contribution means adjusted food cost exceeds the selling price in this simplified model. Check the recipe cost, portion basis, waste allowance, and selling price for consistency.

Is food-cost percentage the same as gross margin?

No. Food-cost percentage is direct food cost divided by sales. Gross margin may include a broader definition of cost of goods and is usually expressed as the portion of sales remaining after those costs.
