What should be included in the food-carbon baseline?

Use the boundary defined for your target, such as purchased food only or food plus waste and packaging. Keep that same boundary when measuring progress.

Can the planning periods be quarters instead of years?

Yes. The calculator only requires equal periods; the displayed per-period reduction will use whichever period unit you chose conceptually.

What if progress already exceeds the target reduction?

The remaining requirement becomes zero. That indicates the entered absolute progress is at least as large as the reduction implied by the percentage target.

Does changing to lower-carbon foods automatically count as a reduction?

It can if your inventory method captures the change and the compared emission factors are consistent. The calculator does not determine the factors or verify the sourcing change.

How is this different from the food footprint calculator?

The footprint calculator estimates an emissions total from quantity and an emission factor. This target calculator starts from an existing baseline total and calculates how much that total must decrease.
