Should I use users or sessions?

Either can work, but they produce different rates. Choose one definition in your analytics platform and keep it consistent across comparisons.

Should failed or canceled orders count?

Usually no. Count only orders that meet your chosen completed-sale definition.

Can conversion exceed 100%?

It can if one visitor places multiple orders, but this calculator uses a visitor-to-order model and flags orders above visitors. For repeat orders, sessions or transactions per user may be a better metric.

Why does paid traffic convert differently from direct traffic?

Traffic sources attract audiences with different intent. Calculate each channel separately before drawing conclusions.

Is checkout conversion the same metric?

No. Checkout conversion normally divides completed orders by checkout starts, while store conversion divides orders by total visitors or sessions.
